Rock Star Recipes - Peanut Sauce

Peanut Sauce
(served over steamed vegetables with rice)
This peanut sauce is great with steamed vegetables over rice or pasta. It’s can be used as a main meal or a side dish. I really think you are going to enjoy it!
Ingredients

- 6 Tablespoons water
- 2 teaspoons sesame oil or any good oil
- 2 Tablespoons organic spicy brown mustard (or German mustard)
- 1/2 cup organic peanut butter (crunchy or smooth)
- 6 Tablespoons tamari (like soy sauce but better) I use San-J organic shoyu naturally brewed soy sauce
- 2 teaspoons brown rice vinegar
- 2 teaspoons fresh ginger, peeled and minced or chopped
- 2 teaspoons fresh garlic, peeled and minced or chopped
- 4 teaspoons honey
- 1 teaspoon crushed red chili flakes
(Rockin’ side note - You could use jarred minced garlic and ginger but fresh is always better, isn’t it?)
Rock Star Secret – If you coat the tablespoon and the ½ cup measurer that you are using with oil, the peanut butter, mustard and honey will come out easy and not stick.
Directions
1. Put all ingredients in medium size pot.
2. Heat on low mixing till combined.
3. Keep on low about 10 minutes – if mixture gets too thick add 1 tablespoon of water at a time and mix until creamy.
Notes
This recipe is enough peanut sauce for 4 main meals of veggies and rice or pasta. Spoon sauce over drained veggies a little at a time and mix – when you have the desired amount of sauce on your veggies or pasta put on plates and add just a little extra sauce to each plate.
In the Vegetable Mix
Today I used 1 onion, 1 carrot, 1 sweet red pepper, 1 zucchini and some broccoli and cauliflower florets. Sometimes I just use onions, zucchini, and carrots or whatever I have on hand. I steamed the chopped onions first for about 5 minutes then added the thinly sliced carrots for about another 3 minutes. I then added the rest of the ingredients and continued steaming for about 3 to 4 minutes until crisp tender. Drain and mix with peanut sauce. Of course, I put my veggies over brown rice, but it is good over pasta too!
Rock Star Secret - Refrigerate any leftover peanut sauce in a well sealed container. It can used again either heated (just add a little water and mix), or cold as a dipping sauce or even add a little to a salad for a peanut dressing.
